RMS Brut Willamette Valley AVA

RMS Brut from the Willamette Valley AVA is a benchmark expression of Oregon's traditional-method sparkling wine. Cool-climate Chardonnay and Pinot Noir deliver vibrant acidity, fine mousse, and layered complexity.

TASTING NOTES

Aromas open with white grapefruit, fresh honeydew melon, and delicate honey notes, layered with hints of lemon curd and ripe pear. On the palate, bright citrus and fresh fruit flavors shine before mellowing into a creamy mid-palate, accompanied by subtle notes of white rose petals and a lingering finish of honeydew melon.

PAIRING NOTES

The wine is complex, with aromatic intensity, and can stand up to rich dishes. Try it with crusty bread and deviled eggs with poached shrimp, or cabbage rolls with pork and rice. It is also perfect with a vegan pistachio-and-mint pasta.

RMS Brut Rosé Willamette Valley AVA

RMS Brut Rosé captures the vibrant energy of the Willamette Valley. Made using the traditional method, it balances bright red fruit, lifted acidity, and a creamy mousse. Elegant and expressive.

TASTING NOTES

Aromas of peony, orange blossoms, raspberries, and strawberries. On the palate, bright acidity lifts flavors of red currant, rhubarb, ripe cherries, and blood orange. The finish is long and dry, with a balance of fruit purity and mineral tension.

PAIRING NOTES

This Rosé offers both white and red wine aromas and flavors, and it is a great match for surf-and-turf dishes. Try it with a classic lobster and filet mignon combination, or steak Oscar. Delicate bubbles are perfect for creamy salmon and avocado sushi rolls. The heightened acidity and delicate sweetness pair nicely with spicy dishes, such as vegan Indian samosas with spiced potato and pea filling.

Marsh Estate Vineyard Pinot Noir Yamhill Carlton AVA

From the marine sedimentary soils of the Yamhill‑Carlton AVA, Marsh Estate Pinot Noir delivers both structure and generosity. An expressive Pinot Noir that bridges elegance and power with remarkable harmony.

TASTING NOTES

Fruit aromatics leap out front and center with a whirlwind of lush raspberry, strawberry jam, red plum, black cherry, and marionberry. With time in the glass, a whirl of cinnamon with a touch of black pepper further complexed the senses.

PAIRING NOTES

Ready for bold flavors to match its intensity, this wine pairs well with grilled halibut with a Dijon mustard crust and Cuban ropa vieja. It is also fantastic with a vegan stew of beets, carrots, and potatoes with sage and raisins.

Sourced from a small, privately farmed plot within the Chehalem Mountains AVA, Private Stash Pinot Noir is produced in very limited quantities. Concentrated aromatics, firm structure, and energetic acidity reflect meticulous clonal selection and low yields. A bold, cellar-worthy Pinot Noir with intensity, precision, and depth.

Aromas open with herbal and fruit notes—rubbed sage mingles with black raspberry and dark plum, while hints of cherry fruit leather and candied fruit add depth. Earthy forest floor character is lifted by the distinctive aroma of juniper berries and a medley of spices.

This highly sophisticated Pinot Noir calls for elegant and intriguing dishes, such as roasted goose on a bed of fennel and parsnip root, or star anise and cinnamon-scented pho with fish cakes. Bold and big is a match with grilled rib-eye steak with chimichurri. For a vegan option, try it with grilled cauliflower steak with salsa macha.
